Add the lemon juice
and toss to cover the fruit well.
Sprinkle 3 tbsp.
sugar on the fruit and toss again making sure all the fruit is covered.
Add the butter and
stir carefully to incorporate.
Spray a casserole
dish on the sides and bottom with a non stick cooking spray.
Set the oven
temperature to 350 degrees and allow the oven to heat.
Mix the baking mix as
directed on the package for biscuits.
Place the fruit into
the prepared casserole dish.
Press the dough over
the top of the fruit being sure to seal the edges.
Vent the dough with a
fork in 6 places.
Bake 35 minutes or
until the crust is a golden brown.
Mix the whipping
cream and the remaining 1 tbsp. of sugar together until the sugar is dissolved.
Pour the cream
mixture over the casserole before serving.

Servings
If you are not partial to rhubarb other fruits
such as peaches, apples or pears also taste great in this recipe. You can also sprinkle a little
cinnamon over the cream for an added delight.
