Put the potatoes in a
large saucepan and cover completely with water.
Place the saucepan on
high heat and bring the water to a rapid boil.
Reduce the heat to
low, cover and cook 30 minutes or until the potatoes are fork tender.
Drain the potatoes
well in a large colander.
Place the potatoes in
a bowl and mash with a potato masher or an electric mixer until completely smooth.
Slight beat the eggs
in large mixing bowl with a fork.
Place both types of
cheese in the bowl with the beaten eggs.
Sprinkle in 2 tbsp.
of the parsley, the salt, pepper and garlic powder.
Mix well to
incorporate all the ingredients together.
Pour the egg mixture
into the mashed potatoes.
With an electric
mixer beat the potatoes for 2 minutes on medium speed or until all the ingredients are incorporate together
well.
Heat up the oven
temperature to 350 degrees.
Spray a glass
casserole dish with a non stick cooking spray.
Spread the potato
mixture evenly into the prepared casserole dish.
Dot the top of the
potato mixture with the butter.
Bake 20 minutes or
until completely heated through.
Sprinkle the
remaining 1 tbsp. parsley over the top before serving.

If you want to jazz up this casserole add some
diced cooked ham or even some diced turkey to it. Experiment with different types of cheeses to add
flavor and color to your casserole.
