Scalloped Pineapple
What You
Need:
1 (20 ounce) can
pineapple chunks, reserve juice
1 C Cheddar cheese,
shredded
1/2 C white
sugar
3 tbsp.
flour
1/4 C
butter
1 C snack crackers,
crushed
3 tbsp. reserved
pineapple juice
How to Make
It:
Set the oven
temperature to 350 degrees and allow the oven to heat.
Spray a non stick
spray on the bottom only of a casserole dish.
Place the pineapple
chunks into a large mixing bowl.
Sprinkle in the sugar
and flour and toss to combine completely.
Place the butter into
a microwave safe bowl.
Microwave on high 15
seconds or until the butter has completely melted.
Add the cracker
crumbs to the melted butter and mix well.
Spread the pineapple
mixture into the prepared casserole.
Place the buttered
crackers over the top.
Bake 25 minutes or
until the crackers are lightly browned.

Servings
Add a 1/2 C of miniature marshmallows in with
the pineapple and cheese to give this casserole a sweet but satisfying taste.
