Lightly spray a
square casserole pan with a non stick cooking spray.
Pour the sugar into a
mixing bowl.
Add the peaches and
the oats and toss to combine.
Pour the egg whites
into a separate mixing bowl.
Add the almond
extract and the skim milk.
Carefully whisk the
ingredients together until completely combined.
Place the peach
mixture into the egg mixture bowl.
Use a rubber spatula
to mix all the ingredients together well being sure to scrape the side of the bowl as necessary.
Spread the mixture
into the casserole dish evenly.
Bake 45 minutes or
until the casserole begins to bubble up around the edges.

This dish is best
served while still piping hot. Not only does this make a great side dish but it also works well
as a dessert with a scoop of ice cream on the side.
